I see that no one answered you about when to vacpack dehydrated things.. There a quite a few books on dehydrating at the library as each food has a different set of criteria on when it is dry dry.. but with most veggies they get hard and crispy.. I often put my dried foods in a mason jar and close it and check a few hours later for moisture condensation on the jar.. if there is no moisture then it is safe to vacpack.. if there is take it out asap and put it back in the dehydrator. My favorite author on drying foods is Mary Bell.
