Chinese or Celery Cabbage

Resembles celery yet is something like Cos Lettuce. Firm crisp easily blanched excellent as green or salad. It is a delicious new vegetable healthy and tasty either raw and cooked. Do not sow seed earlier than July 1st in rows 2 and feet apart and thin to 18 inches in row. If sown early it runs to seed. 60 days. Pkt 5c oz 35c.

Chinese or Celery Cabbage has attained great popularity in the last two years. One grower in Des Moines Iowa in correspondence with the Market Growers Journal writes This fall there was a vegetable called Celery Cabbage sold on ou rmarket and people went crazy over it. Do you know anything about it At the Convention of the Vegetable Growers Association of America (held in Philadelphia October 1914) a display of this new vegetable caused considerable discussion as to its cultivation and true name. We offer the true Pe-Tsai or Chinese Cabbage which has been known and cultivated in China for many years. While practically unknown in the eastern markets the Chinese gardeners of the Pacific coast have successfully cultivated it for years. Pe-Tsai produces beautiful crisp celery-like heads that blanch easily and that resemble a giant Cos-lettuce. As a salad it rivals the finest lettuce while cooked like cabbage or spinach it makes a delightful greens. early sowing is not recommended as during hot weather it has a tendency to run to seed without heading. Sow seed in any good soil the first of August making rows 24 to 36 inches apart and thinning to fifteen inches apart in the row.
