A delicious Italian vegetable which tastes quite like celery but is a little sweeter and more delicate in flavor. The enlarged leaf-bases are unusually boiled in preparation for the table. Sow at intervals in the spring in rows 18 inches apart. Thin the seedlings to 6 or 8 inches apart in the row and cultivate frequently. Later blanch the bottom and stalks by earthing-up like celery.
