I've got to use up the last of the tomatoes so since I'll be in the kitchen waiting for those to cook - I thought I would do something with all the small melons I harvested. I'm just hoping I can find freezer space....
Reuse canning lids and rings. Puree melon and freeze in pint or half pint jars. It's a great treat in the middle of winter. It's great in a fall fruit salad recipe. I'm trying creative new fruit drinks with coconut water as my base. Trying to find something sugarless the kids will like as much as soft drinks. Not an easy task. I've found anything mixed with watermelon, cherry, strawberry and pineapple will usually go over well. I'm buying a nice juicer next year! |

I've never tried it, but I wonder if melon could be sliced and dehydrated?

They do sell those dried fruit rollup things in watermelon flavor.

I cube up melon, put it in a stiff freezer container (like ziploc, etc. but jars work too) and cover them with a simple syrup. They are only slightly softer when thawed after being frozen and my youngest daughter adores having melon in the middle of winter this way. I tried dehydrating watermelon, someone said it would be like watermelon candy....yuck, no one would touch it here, your mileage may vary.

I like that puree melons and freeze.. they would be like ICE CREAM only healthier..I will have to try that only I am not sure it would work with watermelon..you could even mix layers of strawberries or banana's between..
