Too much Summer Squash and Zucchini?

Last week I quick sauteed some sliced squash with some onions then threw some cheese on the top of it. Hubby raved about it! There was a little bit left the next day and even though it was all mushy by then, he ate it anyway. He'll eat anything with cheese on it.....

Anyone stuffed zucchini? I've seen some stuffed with bread crumbs, hamburger and just recently sweet potatoes and bacon. (I love bacon! Giggles)
We grew out some Baker Creek Ronde de Nice Summer Squash and they make the cutest presentations. I don't know how to put the photo on here...don't mean to be spammy but here's the link. http://www.friendsdriftinn.com/recip...e-de-nice.html We've been doing sautee's and quiches with summer squash and mint. It is an intersting combination. I'm running out of ideas, so hope y'all can help me out. The catch phrase at our house is "Zucchini....There's more where that came from!" Giggles

More zuke recipe's!!!!!! YAY!
Calabacita's- sautee cubed zukes or yellow squash with some onions and garlic, add some nice peeled (roasted) medium hot green chili, a can of corn, or better yet, fresh corn off the cob, heat- and eat. A favorite in the SW.

Layer slices of zucchini, onions, peppers and tomatoes. Cover and bake for about 45min. at 400 degrees. Drain off excess juice, cover with cheese and bake for another 30 min. or so. It's really good. I usually drink the drained juice once it cools a bit. It's pretty good. In the winter I will make it with frozen zucchini and peppers and dried tomatoes and onions. Then I put the tomatoes in the bottom and they soak up all the juice and you don't need to drain it. It's not as good as with fresh veggies, but still pretty good.

I have not tired this yet but I read somewhere to shred your squash and freeze. Then when you make meatloaf or spagetti sauce add the squash to them. Sounds good so I will try that.

I sauted peeled cubed overgrown zucchini squash in browned butter with onions and garlic,and served it with salt, pepper and a little drizzle of balsamic vinegar. Next time I am going to do the same thing only use bacon fat and add it to boiled potatoes to make a lighter (carb wise) version of German Potato Salad.

Make zuc bread and freeze it for later, or muffins.
