Thank you Wendy! I wish I could have grown Tomatoes for salsa and spaghetti sauce but I just knew...and then the summer was too cool. My sister did and hers did terrible! My kids tell me it smells awesome when I can and have to taste it. Awwww That is reward enough to be appreciated by them.

Ah what a reward Romy, nothing like appreciation for all your hard work. I've been reading up on the Caponata and am hearing it is not safe to can. Anyone have any info on that cause I wanted to make some to can up for my boss' Christmas baskets.

Ciao all-
Skippy, there are many iterations of Caponata out there - it's a very regional dish. My recipe has quite a bit of balsamic vinegar and little oil. I'll post it when I have a bit more time - it's quite long. I've been canning my Caponata for several years and have never had any issues with it, but if the idea makes you a bit jittery, go with your gut. |

Heck, I just now read that the tomato soup I canned should not have had flour and butter in it without being pressure canned and not sure how I did it, I can't remember. So, will eat that up first and make sure not to keep it months on end. LOL Yes, I'd love that recipe if you don't mind.

LOL. I don't even know what caponata is
! I've read on many sites that using 2T oil or less per pint is safe if you increase processing time and there is plenty of vinegar used.Here is one site that uses oil, but it is for canning peppers. http://www.pickyourown.org/canningpeppersinoil.htm It seems like most sites claim that it'd very important to clean the rims of the jar, oil can degrade the rubber on the lids. |

This was not homegrown...but I did can 7 pints of chick peas a few days ago.
Does that count? And the week before that, I canned 7 quarts of black beans... I canned them from dried beans... Well, I've lots of dried beans in my food storage and just figured it might be handy to have some cooked- canned, ready to eat...just in case... Well, if I lose power, I lose water too unless I connect the pitcher pump...or if I want to use pond water. haha It just made sense to me to go ahead and can some of those dried beans and peas. |

very cool mr! i'm up to my neck in toms, peppers, cukes and summer squash right now, but, when things clear up a bit, i was thinking of canning some dried beans too. they sure would be handy!

Oh, and just before Thanksgiving fresh sweet potatoes will go on sale...dirt cheap.
If I'm lucky I'll find them at .29c-.39c per pound...Then I will buy a whole bunch, as always...and can them for later in the year. LOL I'm such a cheapskate...but my pantry is packed full. |

Weather & natural disasters have really beat the heck out of harvests this year...heard on the news that we might as well not expect bargains on pumpkins because of the flooding.
If you see a good deal on any produce you need to pounce all over it...get busy & can it. haha I'm a 'Can-Can girl'
