When/how do you harvest rapini?

This is my first time growing rapini. My rapini is growing faster than anything else in the garden. I noticed this morning that a small head was forming on one of the plants. Should I cut it now or wait for more heads to form? Can you just harvest leaves and let it grow back?

I agree harvest and enjoy!!! Here in my part of the world it is an early spring green. Cut leaves as you want them, and they will regrow until hot weather sets in.
