Mine is bolting already. So, reading up on "what did I do wrong?" in Harrowsmith Country Life Book of Garden Secrets, is how to pick spinach so as to make it bolt later, and why:

Plants have ingenious ways of monitoring day length. Lettuce and spinach perceive light by way of a chemical phytochrome, in their leaves. Phytochrome is activated by light and triggers a signal to move from the leaves to the apical tip of the plant. When enough of the signal has been received by the apical tip, it starts to produce flower stalks and buds instead of just leaves. If you carefully pick the largest and oldest leaves of your spinach and leaf lettuce as the plants grow, you can delay bolting by reducing the flowering signal going to the apical tip.

Before we learned about this phenomenon, Diane always kept the older leaves on her spinach picked, while Dorothy left the biggest, dirtiest, toughest leaves in place, thinking that they would help the plants grow more quickly with their photosynthesis. Despite leaving those big leaves to help the plant grow, Dorothy's spinach always bolted disappointingly early. By keeping all the older leaves carefully picked, however, Diane was unwittingly removing the flowering signal and preventing its build-up in the apical tip. This helps account for her great success with spinach ... [italics added]

Just added a couple more pages of garden pics on our website under the scrapbook link. Of course our peas are now beans. The lettuce,spinach and radish bed is laying fallow. Summer veggies are going gangbusters. There's also an amusing little video I made if anyone likes ducks under the new and improved link and a seed saving video in the homestead skills link. I took a day off the gardening work. Feels like I've been planting and tending and weeding for a few years straight and our first frost maybe in 6 months.
