we too use the Vita Mix. Make hot soup, wash, make ice vream. There is no waste with this machine. Kinda pricey but comes with a 10 year warranty, my gr. mothers is 50 years old and still works.

a friend has patched a couple 20 gallon crocks. Im sure he said he used fiberglass/resin. You could use a liner to make the kraut, just be careful of the type of plastic.
