YAY I found several Armenians the other day!! only a few, but one is a foot long already! Have only got a few regular cukes all year, & NO zucchini & just a handful of green beans!! How do you know when to pick them?

Congratulations! :)

At about a foot to a foot and 1/2, the seeds are usually still small enough for us to just slice them and eat them. If the seeds get larger, then it's very simple to cut longwise and then scoop out the seeds before eating. You'll have to experiment to see what size you like the best. I sometimes peel the really large ones, but frankly that's not needed either.

Personally I usually just leave them until the 1 1/2 to 2 foot length and scoop seeds. But do try some smaller to see what you think.

I have tried to get a couple of really large ones to ripen to true melon status this spring (the inside starts turning orange like some cantaloupes) but so far that takes a looooong time on the vine, and bugs or splitting have intruded on those fruits. I haven't had any bug issues with these plants except for when I try to reach a mature melon status on one of the fruits.

btw: I have 5 or 6 on the counter now that I need to cut up and freeze to see how I like cucumber soup made out of them. I just pulled some out of the dehydrator that I made chips out of (1/2 of a large one filled 4 trays but wow! they shrink big time). And there are several hanging from the arched trellis and a couple more that'll be ready in a couple days on the chain-link trellis. When they start hitting their stride, you'll have to start getting inventive on how to use them. :)
