    Hi LAC,
    What did you have in mind? That's a pretty vast topic. I can tell you that while you can start a tree from seed, you cannot preserve a variety that way. Apple varieties are all natural hybrids and won't breed true. In short, if you cut open a Gala apple and take out ten seeds, you can grow ten apple trees, but none will be a Gala. Your antique tree does sound very interesting, and could be a Winesap, or a Northern if it's grafted. If it's a seedling (pippin) then it's your very own unique variety! Next winter would be the time to take scion wood for grafting, although you can do bud work in the summer. If you want to have it grafted, I do have a few rootstocks from last year's failed grafts (there are always a few). Let me know.
