Ok so when I do get a new dehydrator ... I would love a good recipe for jerky.. I like to make chicken jerky , Hubbs makes beef or deer jerky .. we buy some stuff at Cabela's pepper/garlic blend.. It is pretty good but would love to make my own :) .. So any good Jerky Recipes??? I want to put my new dehydrator to the test when I get it..

I like to salt jerky sparingly then coat it with powdered chili, especially chipotle powder. I use a spoon to sprinkle it on. With a little bit of practice one can develop a steady hand for making a thin even coat of spice. It sticks pretty well. I don't bother to rub it in.

I don't like to marinate the jerky first, because I discovered that makes a mess. It is more work than I am willing to put into the project.

I'm not sure how much this will do but I like to put in mine-
1/2 cup good soy sauce
1/2 cup lea and perrin's worcestershire sauce
1/2 cup or less franks red hot sauce
1/4 cup dark brown sugar
1 tablespoon(more or less) liquid smoke- I use Colgin natural hickory liquid smoke.
1 to 2 tablespoons of finely chopped or minced fresh garlic
and when I put the meat in the dehydrator I get my pepper mill out and put it to a courser mill and grind out fresh black pepper onto the wet meats and then dry it out.
I have let it soak as little as 2 hours and as long as overnight. just depended on how much I had to dry and how quickly the trays filled up.
it was great on beef and venison.
I think for chicken or turkey adding a bit of ground sage and a bit more brown sugar would do good too... maybe some thyme too.

going to have to make sure my printer has alot of black ink so I can copy all these recipes... Because I will try each and every one :) one at a time:) Middle of winter is commin ya know :)

You could do what I do- copy/paste them to the word processor program that I have in my computer- I think it is just Wordpad or even to your notebook would do it- that way even when the internet is off (it does break down right when I need it some days!) you still have it on your computer- also if you put all your own recipes on your wordpad or notebook you can copy/paste them quickly without having to re-type them when someone else wants them.

we make lots of elk jerkey- this is a rough of what we use, marinate it overnight
box of cheap pink wine
bottle of teriyaki sauce
bottle of soy sauce
bottle of honey
good doollup of chili seeds/flakes

Hmmmm never used honey before lalbs .. We have some , that is a great idea.. thanks :D
